Paella is probably
the most popular Spanish dish, and most people think it's to die for.
There are several different recipes that each Spanish region calls "paella".
The original was made in Valencia and included rice (the main ingredient),
chicken or duck meat, pork chops, rabbit meat, red peppers, green beans,
etc. However, my favorite paella is the one my mom makes (PAELLA MARINERA)
and that's the recipe I will provide. It consists of a big platter with
delicious rice mixed up with wonderful seafood like shrimp and calamari
plus veggies like green or red pepper and sweet peas. Everything is slowly
cooked until it's golden brown and scrumptious.

Ingredients:
» 3 1/2 oz. of small Shrimp
» 1 Pound of chopped Squid / Calamari
» 1 Tomato (minced)
» 2 Pounds of Rice
» 1 Tbsp. of Sweet Paprika
» Safran
» Olive Oil
» Minced Garlic
» 3 quarts of broth (from boiling fish)
» Red or Green Pepper

Make a broth by boiling some kind of fish with lots
of flavor (you will only use the broth to make Paella). Pour some
olive oil on the paella dish (you could use a deep, large pan if
you don't have a paella dish but a paella dish will give you better
results - get it at tienda.com
or your local World Market store). Add the shrimp with minced garlic
and fry it. Take them out and do the same with the chopped calamari,
until the released water is completely evaporated. Add the minced
tomato and some sweet paprika to the mix. Add the rice, along with
the broth and some safran (Plus thin slices of red or green pepper
if you like it). The broth has to be hot before it's added. If you're
using an actual paella dish there's more room for evaporation so
you could use 1 cup of rice per 3 cups of broth. If you're using
a pot or a large pan, use only 2 cups of broth for each cup of rice.
Cook it on low heat for about 1 hour and when it's all cooked, add
the shrimp. |
